These sausage and meat products are typical for the Trentino
The Speck bacon is made from pork legs which are seasoned, lightly smoked and then hung up to ripen. In the Trentino area, the Speck is traditionally made from the boned legs and, unlike South Tyrolean Speck, it is less smoked here. The smoking process of the Speck bacon does not take more than one week.
The Carne Salada is another typical dish in the Trentino. It is a very lean, spiced meat, which is served raw in very thin slices. Parmesan and rocket strips are sprinkled over it. But also cut a little thicker, grilled and seasoned with olive oil, the Carne Salada is a wonderful dish.
